Ten infused spirit trends appearing on bar menus

At one time liquor was a prime way to preserve a heavy harvest, and like all culinary comebacks, concocters have found new reasons for old methods. With the spirit (anything from standard brown and clear liquors to sweet or wine-based aperitifs and liqueurs) as the target, the modern goal is to increase the flavor range and diversity of a bar’s offerings with a housemade, seasonal and distinguishing touch. Laws and trends are aligning with bars that hope to differentiate their menus with a complement of colorful, vibrant, fresh-looking, fresh-tasting housemade signature infusions.
